Quick and Easy Dinner

Goody’s Smoked Chicken and Cornbread Casserole  

Ingredients

2 celery ribs, chopped
1/2 medium onion, chopped
1 tablespoon vegetable oil
3 cups packed crumbled Goody Cole’s Cornbread
1 tablespoon poultry seasoning
3 1/2 cups chopped Goody Cole’s Chicken
1 1/4 cups low-sodium chicken broth
1 cup sour cream
1 large egg, lightly beaten
1 (4.5-ounce) jar sliced mushrooms, drained
1/4 teaspoon dried crushed red pepper
1/4 teaspoon salt
2 tablespoons butter, melted
1 cup (4 ounces) shredded sharp Cheddar cheese 
 

Prep

Sauté celery and onion in hot oil in a medium skillet over medium-high heat 7 minutes or until vegetables are tender; set aside.Combine Goody Cole’s Cornbread and poultry seasoning in a large bowl.

Layer half of cornbread mixture on bottom of a lightly greased 11- x 7-inch baking dish.

Combine onion mixture, Goody Cole’s Chicken, and next 6 ingredients in a bowl. Spoon mixture evenly over top of cornbread mixture in dish. Top evenly with remaining half of cornbread mixture, and drizzle with butter.

Bake, covered, at 350° for 30 minutes or until bubbly. Remove from oven, and top with cheese. Bake, uncovered, 10 more minutes or until cheese is golden.

Deviled Eggs

South of the Border Deviled Eggs

Spice up your next BBQ with this yummy deviled egg recipe, sure to be a crowd pleaser!  

Ingredients

1 dozen large hard-cooked eggs, peeled
1 small ripe avocado, peeled and coarsely chopped
2 green onions, finely chopped
2 tablespoons sweet pickle juice
2 tablespoons mayonnaise
1 tablespoon dry Ranch dressing mix
1/2 teaspoon chili powder (optional)
1/2 cup mild salsa

Preparation

1. Slice eggs in half lengthwise; carefully remove yolks, keeping egg white halves intact.2. Mash together yolks and avocado in a medium bowl. Stir in green onions and next 3 ingredients until smooth. Spoon yolk mixture evenly into egg white halves. Sprinkle evenly with chili powder, if desired. Cover and chill at least 1 hour or up to 24 hours. Dollop with salsa just before serving.

In 1964, President Lyndon Johnson hosted the president-elect of Mexico at a state dinner at the LBJ Ranch in Johnson City.  Catered by Walter Jetton, this dinner for 250 is reported to be America’s First Official Barbecue State Dinner.
